Chicken noodles

  • 2 tbsp vegetable oil
  • 2 boneless chicken breasts, cut into strips
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 medium onions, cut into slices (spring onions is best)
  • 4 garlic cloves, minced
  • 2 small red peppers, sliced
  • 1 x 310g bag beansprouts
  • 990g straight to the wok egg noodles
  • 8 tbsp reduced salt soy sauce
  • 5 tbsp water

I have had recipe requests for an easy noodles dish, so here it is :)
  1. Heat the vegetable oil in a wok (or a large pot if you do not have this), then add the chicken and cook for 5 mins until the chicken changes colour
  2. Add the salt and black pepper, then mix in the onions, garlic and red peppers and leave for another 3-5 mins
  3. Add the beansprouts and egg noodles, alongside the soy sauce and water, and mix well for a further few mins. Check to see if it needs any extra salt or soy sauce, then serve immediately

Alhamdulilah it was delicious, quick and very filling. Enjoy :)
