Bite size meringues

  • 4 egg whites
  • 225g caster sugar
  • 1 tsp vanilla extract
  • 1 handful desiccated coconut to decorate (optional)

I have wanted to make meringues for so long!!! So I finally made them, and ohhh was I glad I did...
  1. Using an electric whisk, whisk the egg whites until soft peaks form (this will take at least 3 minutes + )
  2. Add the sugar teaspoon at a time, continuously whisking on high speed until all the sugar is added, then add the vanilla extract and whisk for a few minutes. You should have a shiny mixture with soft peaks 
  3. Place the mixture into a piping bag, and pipe onto a baking sheet small 'blobs', a few cm apart. Sprinkle with coconut if you like, and place into the oven at 130 degrees Celsius for 1 hour and 15 mins. Then switch off the oven and leave the door open until the meringues cool

I will tell you one thing, I lost count for how many I ate!!! They are deeeeliiiicccciiiiiooooussss, and not hard to make!!! If you give them a go, you will not regret it! Enjoy :)
