Mozzarella chicken escalope

  • 3 chicken breasts, each breast cut lengthways in half
  • 1 cup breadcrumbs
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp fresh coriander leaves, chopped
  • 1 tbsp lemon zest
  • 100g mozzarella cheese, shredded finely
  • 2 eggs
  • vegetable oil for frying

I wanted to make something easy yet tasty for dinner, yet I did not have any breadcrumbs for the chicken escalope...so I made my own breadcrumbs by breaking apart two pieces of bread. So you can always be imaginative and creative, and end up with a delicious meal inshAllah :)
  1. Prepare the chicken, and set aside. In a flat dish, place the breadcrumbs, salt, black pepper, paprika, coriander, lemon and cheese and mix well
  2. In a separate bowl beat the eggs. Heat the vegetable oil on medium heat to shallow fry the chicken.
  3. Dip the chicken breast in the eggs, coating both sides, then into the breadcrumb mixture and place into the hot oil. Cook for 5 minutes each side or until golden brown, then place onto kitchen paper to drain excess oil before serving

Serve with chips, salad, vegetables, or whatever you like. Enjoy the simplicity and ease of this recipe, but most importantly, the deliciousness!
