Puff pastry parcels filled with a spicy potato mix

Ingredients

  • 3 small/medium potatoes, peeled and cut into small cubes
  • 1 tbsp olive oil
  • 3 small onions, peeled and diced
  • 4 garlic cloves, peeled and minced
  • 1 inch ginger, peeled and minced
  • 1 tbsp mustard seeds
  • 0.75 tbsp salt
  • 0.5 tbsp black pepper
  • 0.5 tbsp cinnamon
  • 0.5 tbsp paprika
  • 0.25 tbsp chilli powder
  • 3 medium mushrooms, cut into small cubes
  • 2 tbsp tomato puree
  • 2 ready to roll puff pastry sheets
  • 1 handful cheddar cheese (optional)
  • splash of milk

Directions

When you want to make something super easy and delicious, grab some puff pastry and follow me ... :)
  1. Place the potatoes into boiling water, with a pinch of salt, and leave until the potatoes are starting to soften (but not too soft or they will go mushy), give the potatoes 10 mins to boil, then check them using a knife. Drain and set aside
  2. In the meantime, heat the olive oil in a pot, add the onions, garlic and ginger and cook until the onions change colour. Add the mustard seeds and mix well. Add the salt, black pepper, cinnamon, paprika and chilli (as well as any other spices you fancy). Follow on by adding the mushrooms and mix well
  3. Add the tomato puree and mix well. If the mixture starts to stick to the pot, add a few tbsp of water to loosen it up. Add the drained potatoes and mix gently until the mixture coats the potatoes. Taste and adjust seasoning then turn off heat and leave to cool a little
  4. Oil your surface, and cut the puff pastry sheet into six parts. Fill each square with the potato filling and cheese if you wish. Fold each corner onto the other (as shown below) and seal it up. Place onto an oiled oven tray and rub some milk to the surface of each parcel. Place into a hot oven for 10-13 mins (check to see if the puff pastry has turned golden brown), if not leave in for longer. Remove and serve!

These treats give you a slight reminder of samosas, but in a much quicker and easier version! Best of all, they are suitable for those who like to keep away from meat! Enjoy :)
