Saag aloo (spinach and potato)

  • 1 tbsp vegetable oil
  • 3 small potatoes (approx 250g), peeled and cut into small cubes
  • 3 garlic cloves, peeled and minced
  • 0.5 tsp coriander powder
  • 0.5 tsp cumin powder
  • 250g freshly frozen spinach
  • 1 green chilli, finely chopped
  • 1 tsp salt
  • 1 tbsp freshly chopped coriander
  • 0.5 lemon, juiced

I have a patient who mentioned their favourite thing to order from the Indian restaurant was saag aloo. So off Nosaiba went to hunt down what this dish was, and she realised it not only sounds delicious but it is so easy! So here is one of the ways to make saag aloo. Some also add onions or extra spices. I found this version so delicious mashAllah and it took minimal effort to make! I adjusted the recipe in a way I thought would enhance the flavours even more.
  1. Heat the vegetable oil in a pot, when the oil is hot add the potatoes and garlic. Mix for a few minutes, then add the coriander powder and cumin powder. Leave until the potatoes are starting to cook (a fork should go through the potato, but with a little difficulty)
  2. Add the spinach and the green chilli, mix over the heat for a further five to ten minutes, or until the spinach defrosts and potatoes cook through
  3. Add the salt, coriander and lemon. Mix well, taste and adjust the salt and lemon according to taste, then serve

We enjoyed this hot with pitta bread. So delicious mashAllah! Enjoy :)
