Almond and cranberry biscotti

  • 100g whole almonds
  • 50g unsalted butter
  • 225g self raising flour + more for dusting
  • 70g dried cranberries
  • 100g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.75 tsp almond extract (optional)

My dear sister loves biscotti, well so do I, and I have always wanted to make them..but just never did. Her request was for me to make them, and so I did. I decided to make almond and cranberry biscotti as I thought the two together would be delicious..and alhamdulilah it sure was.
  1. Place the whole almonds on a baking sheet and place into a hot oven for 7-10 mins or until lightly roasted. Remove, leave to cool then chop
  2. Melt the butter, then set aside to cool
  3. In a bowl, sieve the flour, then add the chopped almonds, cranberries and sugar. Mix together with a fork to combine
  4. In a separate bowl, mix the eggs, melted butter, vanilla extract and almond extract using a fork, then slowly add them to the flour mix whilst mixing the mixture with a fork
  5. Use your hands to combine the mixture, and add more flour if the mixture is too sticky (I added at least a quarter cup more of flour)
  6. Flour a clean surface, and place the mixture on it, dividing the mixture to make two 20cm logs
  7. Place onto a baking sheet, and bake the two logs on 180 degrees Celsius for 20minutes
  8. Remove and leave to cool for 5minutes before cutting slanted pieces using a serrated knife, place the biscotti pieces back onto the baking sheet, and bake for a further 10minutes, flipping each one on the other side for a further 5minutes
  9. Remove onto a wire rack, and leave to cool completely to ensure the biscotti hardens up

This was delicious, and easier to make then you would think. Enjoy with a cup of tea or coffee. Enjoy :)
