Broccoli and courgette pasta bake

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 onions, peeled and chopped
  • 2 cloves of garlic, peeled and finely chopped
  • 500g pasta (I used penne)
  • 0.5 tsp salt
  • 1 dash olive oil
  • 1 broccoli, cut into small florets
  • 8 baby sweetcorn, cut into smaller pieces
  • 1 courgettes (+ 1 more for the topping) halved then thinly sliced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 can chopped tomato
  • 0.75 cup milk
  • 4 tbsp tomato puree
  • 2 chillis, finely chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp cinnamon
  • 1 handful cheddar cheese (+ more for topping)

I had a few vegetables I needed to use up, and I needed to make something that doesn't take too long to cook, so I thought a pasta bake would be perfect for this. You can adjust the vegetables according to what you have on hand, I have listed what I used only because these vegetables were in my fridge :)
  1. In a large saucepan, heat the olive oil and butter, then add the onions for a few minutes, followed by the garlic
  2. Meanwhile, place the pasta in a large saucepan, and pour boiling water over it till it covers all the pasta + a few inches more. Add to the water the salt and olive oil and leave to simmer for 5 mins over medium heat. Then add the broccoli and baby sweetcorn and leave for a further 5 mins 
  3. When the onions and garlic have changed colour, add the courgettes, followed by the salt and pepper. Mix well for a few minutes over medium heat. When the pasta is cooked, place it with the vegetables and mix well to ensure the pasta is coated. Place into a deep oven dish and mix more if needs be
  4. In a separate saucepan, place the chopped tomato, milk, tomato puree, chillis, salt, black pepper and cinnamon, then bring to a boil over medium heat. Once it boils, add a handful of the cheddar cheese and allow it to melt
  5. Place the tomato sauce over the pasta in the oven dish, and mix well. Top with cheddar cheese, and neatly align the thin slices of courgettes. Place in the oven at 200 degrees Celsius for 20-25 mins (or until the cheese has melted and the courgettes have coloured)

Adding two chillis to the tomato sauce gave this a kick! So adjust according to your taste. Enjoy :)
