An easy side to the dinner table, or a perfect accompaniment to your mums favourite meal...fried fish!!
This is the Lebanese way of making corn fritters, and it turns out very delicious mashAllah!
- In a bowl, add the onions, parsley, sweetcorn, salt, cinnamon and black pepper. Mix well
- Whisk together the eggs, then mix into the mixture inside the bowl
- Add the flour and mix well, followed by the milk. Add a splash of water if needed (literally a few drops) - otherwise the consistency should be perfect - not too solid - not too liquid
- Heat up frying oil, and drop a tablespoon of the mixture at a time into the hot oil. Leave for 4-5 mins to turn over, or once browned. Leave for a further 2 minutes on the other side, or until browned, then remove onto a plate with kitchen paper to drain off the excess oil - until ready to serve
I served it with fried fish, salad, chips and vegetables - absolutely delicious :D enjoy :)
