Mediterranean feta salad - nosaibasfood style :)

Ingredients

For the salad
  • 150g baby plum tomatoes, cut into quarters
  • 2 inch cucumber, chopped
  • 0.5 red pepper, chopped
  • 0.5 yellow pepper, chopped
  • 1 carrot, peeled and shredded
  • 1 small piece of red cabbage, finely chopped
  • 1 handful baby spinach, chopped
  • 1 handful mint leaves, chopped
  • 1 handful parsley leaves, chopped
  • 3 tbsp sweetcorn
  • 4 tbsp olives, chopped
  • 1 avocado, de-seeded and chopped
  • 1 germane lettuce, chopped
For the dressing and topping
  • 0.5 tbsp salt - adjust to taste
  • 3 tbsp cider vinegar (or lemon) - adjust quantity to taste
  • 3 tbsp olive oil - adjust quantity to taste
  • 1 tbsp mixed herb
  • 100g feta cheese, chopped
  • 1 handful pumpkin seeds
  • 2 handfuls dried cranberries
  • 1 handful pine nuts
  • 2 handfuls pomegranate

Directions

It was one of those moments when you crave a delicious, juicy, flavourful salad - that satisfies both tangy and sweet flavours. This salad does all this, the sharpness from the vinegar is met by the sweetness of the dried cranberries, the juiciness from the pomegranate, the saltiness of the feta and the crunchiness of the pine nuts. It is a perfect quick salad, with so many ways to personalise it to your liking.
  1. Add all the ingredients under 'for the salad' into a serving bowl. If you are preparing this in advance, do not mix these ingredients, cover and leave in fridge until ready to use 
  2. Add the salt, cider vinegar, olive oil and mixed herb to the salad bowl and mix well. Taste and adjust accordingly (you may need to add more salt, more vinegar or more olive oil to balance out)
  3. Add the feta cheese, mix gently, then top with pumpkin seeds, dried cranberries, pine nuts and pomegranate 

You will be surprised how refreshing this salad is, and how the taste of all the components go so well together. You may wish to add or remove certain ingredients - but ultimately - you know you are in for a guilt free treat! Enjoy :)
