Lemon and garlic chicken with potato

Ingredients

  • 1 skinless baby chicken, cut into 8 pieces
  • 4 medium sized potatoes, peeled and cut into 6 pieces
  • 7 garlic cloves, peeled and minced
  • 0.75 tbsp salt
  • 0.25 tbsp black pepper
  • 0.25 tbsp cinnamon powder
  • 0.5 tbsp paprika
  • 3 lemons, juiced
  • 1 tbsp olive oil
  • 1.5 cup hot water
  • 1 chicken stock cube

Directions

I absolutely love this super easy, absolutely delicious dish that you can put together so simply, then let the oven do the rest of the work. It was literally finger licking-ly good! You have to give it a go to understand what I mean!
  1. In a oven proof deep dish, place the chicken and potatoes
  2. In a bowl, add the garlic, salt, black pepper, cinnamon powder, paprika, lemon juice, olive oil, hot water and chicken stock cube and mix well
  3. Pour the mixture from the bowl over the chicken and potatoes. Bring the chicken to the surface. Cover with foil and place into a hot oven at 220 degrees Celsius for 20 mins
  4. After 20 mins remove the foil and allow to continue to cook in the oven for a further 35 mins or until the potatoes have softened and chicken cooked through

You may wish to serve this with rice, or as I like it, with some arabic bread! Yummy! So easy, so simple, yet soooo delicious! Enjoy :)
