Marinated Chicken Wrap

Ingredients

  • 2 boneless chicken breasts, each cut into 3 horizontal slices (depends on size of breast and preference)
  • 5 garlic cloves, peeled and minced
  • 1 inch ginger, peeled and minced
  • 0.5 tbsp salt
  • 0.25 tbsp black pepper
  • 0.5 tbsp chilli powder
  • 0.5 tbsp red chilli flakes
  • 0.5 tbsp ginger powder
  • 1 tbsp paprika
  • 1 tbsp tandoori masala
  • 0.5 tbsp garlic powder
  • 2 tbsp olive oil
  • 2 tbsp plain yoghurt
  • 1 tbsp hot sauce
  • 0.5 lemon juice
  • handful freshly chopped parsley
  • 1 tbsp olive oil for griddle

Directions

This is such a versatile recipe, you could use it to marinate chicken for any type of dish. I decided to make it into a sandwich wrap, you could put it over rice, as a side with bread and dips, over a salad, bbq on skewers ... the options are vast! So use this recipe to help you enjoy it in whatever way you like!
  1. In a bowl, add all the above ingredients (except the final olive oil for griddle). Mix it well, cover and leave in the fridge to marinate (could be half hour or overnight, depending on your time)
  2. Heat a griddle over medium high heat, add the olive oil and cook each slice of chicken. Colour the chicken either side (may take at least 3-5 mins), then cover the griddle and allow the chicken to cook through
  3. Once cooked through, remove onto a plate and allow the chicken to rest before serving

I decided to make it into a wrap, with added chips, ketchup, lettuce, tomato, pickle and a humus spread. Enjoy :)
