Cold tuna pasta

  • 700g shell - shaped pasta (known as conchiglie, or pick any shape you like)
  • 0.5 tsp salt
  • 1 splash olive oil
  • 3 cans of tuna
  • 2 cans sweetcorn
  • 10 tbsp mayonnaise (add more or less)
  • 1 lemon, juiced
  • 1 small onion, peeled and finely chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 pinch of oregano
  • 2 handfuls grated cheddar cheese

    15 mins

With the sun is out and you feel like a cold dish, why not have a tuna pasta?
  1. In a large pot, add the pasta, salt and the splash of olive oil, and add enough boiling water to cover the pasta. Leave to cook for 10-13 mins (or until al dente)
  2. Remove from the heat, drain and leave to cool 
  3. Once the pasta has cooled down, add the rest of the ingredients, tasting and adjusting the quantites as you like, then serve

You may wish to add chopped cucumber, grated carrots, chopped bell pepper...or anything else you may like. It really is so simple I thought maybe I shouldn't upload it...but there we go. It has been uploaded now :D Enjoy!
