Iced lemon traybake

I cannot emphasise just how much I would love everyone to make this recipe!! It is so simple yet sooooo tasty! I personally love lemony food, but even my little sister who doesn't, loved these! Please give them a go - you wont regret it!

1. Grease and place greased baking paper in a 30 x 23cm roasting tin
2. Place all the ingredients for the cake into a bowl, and whisk for around 2 minutes until well blended. Turn the mixture into the prepared tin and level the top
3. Bake at 180 degrees Celsius for 35-40 minutes or until a tester comes out clean. Leave the cake to cool in the tin
4. Mix the icing ingredients until a fairly runny consistency (adjusting the amounts as necessary), then spread out evenly over the cooled cake and leave to set

As you can see from the above steps, there really is nothing to it! I will definitely be making these for guests inshAllah...however, I would wait longer for the icing to completely set, and would wipe the knife after cutting each slice, to ensure a beautiful finish to this yummy iced lemon traybake :) Enjoyyy!
