Directions
Mint? White chocolate? Cupcakes? Yes? In that case, these are going to come down as a treat :)
- Put the mint leaves in a heatproof bowl, cover with boiling water and leave for 30 seconds. Drain and pat dry with kitchen paper
- Put the leaves in a food processor, add the caster sugar and process until the mint is finely chopped
- Transfer the mint sugar to a bowl and add the butter, eggs, flour, baking powder and vanilla extract. Beat with an electric whisk for one minute, until light and creamy
- Stir in 3/4 of the chocolate and then divide the mixture between paper cases in a bun tray. Scatter with the remaining chocolate
- Bake at 180 degrees Celsius for 20 minutes, or until the cakes rise and just firm to the touch. Transfer to a wire rack to cool. Lightly dust with icing sugar
