Fruit plait

For the dough:
  • 250g plain flour
  • 0.5 tsp salt
  • 15g instant yeast
  • 6 tbsp warm milk
  • 50g butter melted
  • 1 egg, beaten
  • 50g caster sugar
For the filling:
  • 500g apples, peeled, cored and chopped
  • 125g sultanas
  • 125g soft brown sugar
  • 1 tsp ground mixed spice
  • 0.5 tsp cinnamon
For the icing:
  • 75g icing sugar
  • 1 tbsp water

This recipe is something I used to make when I was at high school, and it would turn out lovely! So I dug out the recipe (not literally), and here's my 'grown up' attempt at this amazing dessert, no pressure on me to ensure it turns out good!!
  1. Sift the flour, salt and yeast into a bowl. Add the butter, egg, sugar and milk and mix to form a smooth dough. 
  2. Turn onto a floured surface and knead the dough for 10 minutes until smooth and elastic (I needed to add quite a bit more flour as I was kneading, until it became not so sticky)
  3. Place the dough in a lightly greased bowl, cover with a damp cloth and leave in a warm place for about 2 hours or until it doubles in size
  4. Meanwhile, prepare the filling by placing all the filling ingredients in a saucepan and cook until pulpy. Turn onto a plate and leave to cool completely
  5. Turn the dough onto a floured surface and knead for 2 minutes. Using a rolling pin, roll the dough to 35 x 20 cm (14 x 8 inches), and spread the filling down the centre 7.5 cm (3 inches). Make slanting cuts 5 cm (2 inches) long at 2.5 cm (1 inch) intervals at each side of the filling
  6. Take a strip from each side and cross them over the filling to make a plait. Tuck the last two strips underneath and seal with water
  7. Place on a greased baking sheet. Cover and leave in a warm place for about 30 minutes until doubled in size
  8. Bake in the oven on 200 degrees Celsius (gas mark 6) for 20 minutes (the recipe called for 30-35minutes!! I would say by 15 minutes check and keep an eye on it, as I trusted the recipe, and see below what happened!!). Transfer to a wire rack
  9. Mix the icing sugar with the water and brush over the plait whilst still warm, then leave to cool

Lesson learnt from this recipe: don't leave anything in the oven thinking the timing is going to be the same as instructed, ovens vary, so you need to keep an eye!!! This recipe process may be long, but it isn't difficult! And of course, if I could make it, anyyyyone can!! :) May I also add, this fruit plait honestly tastes AMAZING! So do give it a go and enjoy the yummy goodness! :)
